This is by far my favorite way to start the day. Topped with fruit, it leaves you satisfied and gives you energy to conquer your day. And its sooo good!
The Recipe:
serves 4
- 2 cups raw almonds, soaked for 8 hours in water and drained
- Small handful of raw walnuts or pecans
- 1/2 cup raisins
- Juice of one lemon
- 1 teaspoon cinnamon
- 1/4 – 1/2 cup organic rolled oats (optional)
- Water
I recommend soaking the almonds overnight. I soak a whole 16oz bag in a bowl at a time and store them in the fridge. Then they’re ready for the week!
Place almonds, walnuts or pecans, raisins, lemon juice and cinnamon in the blender and chop until crumbly. Scoop into a bowl and add small amount of water to moisten. Add oats (optional). Top with fresh fruit. Enjoy!
